hi Wai and members, i dont understand this step of immerse the eggs pan of cool salted water{sorry}, can you explain it? also, it doesn't matter if the eggs in the supermarket are in a refrigerator?

don't worry about it, it is not important as long as you check the firmness of the egg yolks, so simply focus on that!
