Wai,

You say not to eat eggs that dash around when you shake them, but alot of times after I take them out of the water after checking if they have any cracks in them, they will dash when shaken while they did not dash before goin into the water.

in that case, you just need to check the yolks for firmness; if the yolk break when you hold it in your hand, it is not fresh enough. But if you really need to slice it open to be able to drain out the liquid, it is fresh enough...

What about if, the egg having passed all the other tests, the yolk breaks when I'm moving it repeatedly from one half of the shell to the other to remove the white?

Do you know why an egg will dash after being emerged in water?

if it is fresh enough, it wount break, unless the broken shell cuts the yolk open...

water must have entered; either because the shell is porous, or contains a crack, which may be a very recent crack, or not...
