| Wai 05-17-2003 11:24 AM | maltodextrins are polysaccharides (of glucose); partially hydrolyzed starch products (degree of hydrolysis > % of reduced sugars) the starch is cooked and then decomposed (by enzymes / acids) not starches (or their hydrolysis products) are excluded from this diet, but all the foods that are high in starches (grains, beans, and their products) maltodextrins may however contain very small amounts of protein, and then it is excluded from this diet so you need to know whether this specific maltodextrin is 100% sugars only |
