Hi Wai (yet another question),

What do you think of high-fructose fruit like pears and apples. I think it's important to not eat only high-fructose fruit, but always combine it with fruits that also have enough glucose.

Well, I feel worse when I eat only pears. I feel a lot better when I eat mandarins..

If you consume lots of fruits, the sugars they supply you with, will averagely consist of about 50% fructose.
Below is the total fructose contents (the fructose, plus half the sucrose) of fruits relative to total carbs.

62% Guava
62% Pear
61% Apple
61% Watermelon
57% Mango
52% Orange
52% Kiwi
51% Strawberry
51% Pineapple
50% Grapes
49% Muskmelon

Most of them do; roughly half is fructose and half is glucose, plus some traces of other sugars

I don't think it's the difference in glucose/fructose ratio, since that is only a 14% difference...
It might be a specific enzyminhibitor / phytochemical.

Is it best just to have a variey of fruit with different ratios of each? Do fruits with higher percentages of glucose lead to more blood sugar fluctuations? i.e. is it better to have more watermelon than banana?

It is always best to have a variety of fruits.
And yes, glucose more directly influence the blood sugar level, that is true, but in that regard all fruits are good, for containing a large ratio of fructose.
The ratios of fructose to glucose vary little; in general, the fructose contents are about 50% (see list in previous post).

the difference is only 18%...
so, that doesn't make a difference.
What DOES make a difference, is the amount of fat ingested; only fat stabilizes the blood sugar level.
