any major differences other than quantities? Should they have more or less of anything?

Men need less cholesterol, because they don't menstruate.
They need more energy in total, but also relatively more sugars since they generally have bigger muscles (not always!)
They need relatively more protein, and relatively less fat (maybe more in total).
But, of course, this is can all be very different for different men.
Regarding following the diet, it actually doesn't make any difference... (except when they want to gain muscle volume)
