Is there any problem with having fruit or juice and a couple of egg yolks before sleeping? I am just concerned that it may not be beneficial in regards to body fat loss if one goes to sleep with high blood sugar levels. Is it better to go to sleep on an empty stomach?

No.

Your blood sugar levels are not high due to consuming some juice and egg yolks. If there is too much sugar in the blood, it will be converted into glycogen.

You can safely drink some juice with yolks right before you go to bed.
