I purchased brazil nuts in the shell from the recommended nutsonline.com site and they arrived today. Just like the shelled brazil nuts I bought locally, they are definitely more yellow on the outside than on the inside, though still not very yellow.

Should they really be totally ivory colored?

Also, these in the shell nuts taste worse than the store-bought shelled ones, though they look about the same.

the more ivory they are, the fresher they are
but no, you can eat the yellow ones as well, as long as they dont taste bad / raunchy / bitter

if the nuts were really very fresh, than they would taste better than the shelled ones

I recently came accross a source of EXTREMELY fresh brazil nuts, and they honestly have a very similar creamy flavor to coconut. Almost all brazil nuts I have gotten in the store are very dry, much moreso than hazelnuts.

Yes! A bit coconut-like! These are really hard to find, and REALLY fresh! Yummy!
