For how long can you keep the nuts once you've unshelled them? Let's say I unshell a bunch of them and keep them in a glass jar/plastic container, are they still good to consume or useless (due to loss of freshness or nutrients) after let's say a week?

The shell protects the nut against moulds. You can taste it when the nut has really deteriorated, but I don't think this goes for (all) moulds 'ínfiltrating' the nut.
I personally don't take the risk and eat the hand-shelled nuts that same day. They also taste best when consumed 'freshly shelled'. (not dehydrated)

Wai, i REALLY LOVE NUTS [Big Grin] and i have searched in every store in the vicinity of my house for unshelled/shelled by hand nuts but unfortunately i did not find any brazil nuts!!! [Frown]
The only nuts i found unshelled were pistacchios, peanuts (can these be eaten raw???) & chick peas - are these a good substitute for brazil nuts? (as these are only availiable in the winter over here)
Oh yes and one more thing - supposing that i leave the brazil nuts in their shell, how long will they remain fresh? Thanks!

the pistachios and peanuts that you can buy are never raw; they are roasted in the shell.

Chick peas cannot be consumed raw.

You can store and eat them up to 3 years after, depending on how fresh they are.
