Thank you!

some creme fraiche (Yeo Valley Organic Company) contains 17.5% fat, while there is also 'half fat' and 'diet' creme fraiche, containing much less fat, so make sure to chose the full fat version

mascarpone polenghi contains way more fat (over 50% fat, i believe), and is therefore more effective

(BTW; here's a mascarpone polenghi recipe from: http://www.dorothylane.com/departments/recipes/748.html :
quote:
Ingredients:

(1) 8 3/4-oz container Polenghi Mascarpone cheese
1/4 cup confectioners' (powdered) sugar
1/2 tsp vanilla extract
1 DLM French Blueberry Loaf
1 cup Rothschild Key Lime Curd Sauce
1/2 pint fresh blueberries
Directions:

Using an electric mixer, combine the mascarpone, sugar, and vanilla until blended. Slice the loaf lengthwise into thirds. Spread the bottom two layers with the cheese filling. Rebuild the loaf in to its original shape. Wrap with plastic wrap and foil, and store in the refrigerator (may be made 2 days ahead). Slice and serve with Rothschild Key Lime Curd Sauce and fresh blueberries.

Makes 8 serving
