| Wai 12-11-2002 03:17 PM | I don't know what the involved temperature is... Cooking, or near cooking, that is bad for sure. I guess the temp. in a dehydrator is much lower, but I might be wrong. Anyone? |
| Dawn 12-13-2002 03:59 PM | Authors of the many "raw food" books that I have read, state that a food is considered "cooked" when the enzymes have been destroyed by heat. Some say that the enzymes are destroyed at 104 degrees, and other say 108 or 118, or anywhere in between. I think you should be safe at about 108 degrees. You must use a dehydrator that has a good temperature control in order to be accurate about this. Dawn |
