I know salt is not good for acne but is it because the salt has been processed in some way? Or is it because of the sodium content?

No salt is okay, no matter whether, or in what way it has been processed.
All salt can cause acne because of the water-attracting properties.

A natural salt substitute is to gently dehydrate celery (which contains natural sodium) and chop it up and use it as a seasoning. Do you think this will still pinch off the sebum canals anyway?

sounds good, and my guess is that you will absorb little sodium, BUT, yes, it might be too much, and cause acne; it is not about whether the sodium ingested is from a 'natural source', but the ingested total amount of sodium...

All fruits contains sodium as well, but in very moderate amounts. The more sodium you ingest, the greater the acne risk.
Once your skin is clear, you can start to experiment with how much sodium your skin can cope with, which is individually VERY different.

Before starting your diet I often used "Hymalaya salt". Is it ok to include that special salt into your diet?
